sautee olive oil and onions with zucchini and when the zucchini gets soft, you add some pieces of bread (french or italian) in the pan and you can add cheese on
it too.

the onion bruschetta is sold at many stores in calabria, mostly in tropea and pizzo. that’s the specialty in tropea, the onions. tropea is a beach resort in
vibo. a little touristy now, but nowhere near as touristy as taormina.

yes we used to use bread that was like two days old. as for the cheese, well anything that melts. obviously don’t use cheddar or american or anything like
that. use a mozzarella, but not the fresh one.
