Tried some today for the first time in my life

Shame. It's actually really good if you prepare it correctly, but it may be an acquired taste because I think it's related to tobacco. lol. Both are
nightshades. Eggplant contains tiny traces of nicotine. 

You should prepare it this way for eggplant parmigiana.

Eggplant is kind of like the bacon of vegetables, you cant really eat it straight but it goes well with a lot of other stuff

I love going to a mid eastern restaurant and getting a bunch of dips, eggplant included

Chinese also do good eggplant

Eggplant is super versatile, but isn't always that user friendly. It drinks a LOT of oil, like all the oil and then more, unless you draw out excess water by
salting it first.
